Khao Kai Jiew (Thai Style Omelet over rice)

A Thai-style omelet over rice is a really (flavorful Thai people’s comfort food.
It’s made by mixing eggs with fish sauce, and sometimes adding things like green
onions or chilies. Then it’s fried in really hot oil, which makes it puff up and get
crispy on the outside while staying soft inside.
It’s served over hot jasmine rice, usually with some chili sauce or ketchup on top.
It’s a little salty, really rich, and just hits the spot. The crispy edges with the soft egg
and warm rice make it so satisfying and easy to eat.

Ingredients

  • 2 eggs
  • 2 tbsp green onions (chopped)
  • 2 tbsp onion (thinly sliced)
  • 1–1½ tbsp fish sauce
  • Oil for frying (about ½–1 cup, enough for shallow/deep fry)
  • 1–1½ cups cooked jasmine rice (hot)
  • Chilli Sauce or Ketchup (Optional)

Preparation

  1. Prepare jasmine rice first so it’s hot and ready to serve.
  2. Crack eggs into a bowl, add fish sauce and water/lime juice. Beat well until a little frothy.
  3. Mix in green onions and sliced onions.
  4. Heat oil in a pan on medium-high to high heat. The oil should be really hot.
  5. Pour the egg mixture into the hot oil. It should puff up right away. Let it cook until golden, then flip and cook the other side.
  6. Take it out, drain oil, and serve over hot jasmine rice. Add chili sauce or ketchup if you like.

Thai Tips

  • Hot oil is everything. If the oil isn’t hot enough, it won’t puff and won’t get
    that crispy edge.
  • Beat the eggs well. If there’s more air, the omelet will be fluffier.
